  • Light Lime Roasted Chicken Breasts

    Ingredients

    • 4 x chicken breast halves without skin
    • 1/2 tsp salt
    • 1/2 tsp grnd black pepper
    • 2 x limes
    • 3 Tbsp. extra virgin olive oil -- divided
    • 2 1/2 tsp white wine vinegar
    • 2 x limes
    • 2 1/2 tsp minced fresh basil

    Directions

    1. Rub chicken with salt and pepper, and place in a shallow dish or possibly heavy-duty zip-top plastic bag; set aside.
    2. Grate lime rind and squeeze juice from 2 limes.
    3. Combine grated lime rind, lime juice, 2 Tbsp. oil, and vinegar; pour over chicken. Cover or possibly seal; refrigerate2 1/2 hrs, turning occasionally.
    4. Bake at 375 degrees F. in a roasting pan 45 min or possibly till done.
    5. Peel 2 limes and cut into thin slices.
    6. Heat remaining 1 Tbsp. oil in a small skillet; add in lime slices and basil, and cook, stirring gently, 1 minute or possibly till fruit just begins to soften. Spoon over chicken.
    7. Yield: 4 servings.
