    Ingredients

    • 3 c. skinned shredded roasted chicken breast (about 12 ounces) (such as Tyson's)
    • 3 c. warm cooked penne (about 6 ounces uncooked tubular-shaped pasta)
    • 2 c. romaine lettuce thinly sliced
    • 1 1/2 c. cherry tomatoes halved
    • 1/2 c. fresh basil thinly sliced
    • 1/2 c. green onions minced
    • 1/3 c. nonfat caesar salad dressing
    • 1/4 c. fresh parsley minced
    • 1 pkt crumbled feta cheese (4-oz)
    • 1 x garlic clove chopped

    Directions

    1. Yield: 4 servings
    2. Preparation Time: 10 min
    3. Cooking Time: 16 min. While this salad can be enjoyed the way it is, you can include or possibly substitute different kinds of chicken, turkey, cheese, salad dressing, or possibly herbs.
    4. 1. Combine all ingredients in a large bowl; toss well to coat.
    5. Yield: 4servings
    6. (serving size: 2 c.)
    7. Note: To lower the sodium in this dish, use plain cooked chicken in place of the commercial roasted variety, that is fairly high in sodium.
