I know broccoli is good for me, most of us do. Packed with all those great phytonutrients (love that word!), broccoli is one of those cruciferous vegetables nutritionists are always telling us to eat. Still, just try getting a kid to eat a stalk of steamed broccoli. Probably not going to happen.
Healthy food can taste good without a lot of fuss. Broccoli salad is one of my favorite work day lunches. It’s easy to put together the night before, and I can add almost anything to it. A little light mayo, a few tablespoons of vinegar, and whatever veggies, nuts and dried fruits you have in the pantry.
I bet you can get your kids to eat their broccoli now!

1. Combine mayonnaise, vinegar and sugar in a small bowl.
2. Combine remaining ingredients with mayonnaise.
3. Refrigerate for 30 minutes before serving.
