Les' Cottage Cheese Garden Salad
Ingredients
- 24 ounce Cottage Cheese, small curd
- 1 stalk celery, diced
- 1/2 x Carrot, grated
- 1/2 x Green Bell Pepper, seeded, diced
- 4 x Scallions, diced
- 1 x Plum tomato, seeded, diced Salt and Pepper, to taste
Directions
- Mix all ingredients together. Chill for 1 to 2 hrs. (Overnight is best. Serve on a bed of fresh spinach or possibly lettuce. Garnish with minced or possibly whole scallions.
