    • 2tbsp olive oil
    • 1 finely chopped onion
    • 1 tomato chopped
    • Handful of coriander leaves
    • Salt and pepper to taste
    • ½ tsp cumin powder
    • ½ tsp ground coriander powder
    • ½ tsp turmeric
    • 1 cup of your choice of lentils, I used yellow pigeon peas

    Directions

    Lentils are available in most grocery stores and are high in protein, healthy and very cheap.

    This vegetarian lentil soup recipe uses plenty of spices to perk up the soup.

    Enjoy this traditional and warming dish!

    Method

    Boil the lentils in a lot of water,add some salt.

    Boil until the lentils are totally soft and mushy.

    Keep aside

    In another pan,heat the oil and sautee the onions until transparent.

    Add the tomatoes and all the spices.

    Cook for about 5 minutes.

    Add the lentils and cook for another 10-15 minutes.

    Add coriander leaves.

    Serve hot with some rye bread.
