    Rustic bean soup flavored with bacon. If your family don't like beans, they will love it !

    Ingredients

    • Bacon, 3ounces
    • 1 Onion
    • 2 carrots
    • 2 garlic cloves
    • 2 tbs tomato paste
    • Lentils 1 / 2 cup
    • Thyme (dry) 1 / 2 tsp
    • Water 3cups
    • 1 soup cube
    • 1 tbs red wine vinegar

    Directions

    1. Cut bacons into 1/2 inch pieces. In a heavy Dutch oven, cook bacons over low heat until crisp. Add minced onion and garlic cloves,and chopped carrots. Cook them until softened.
    2. Stir in tomato paste. Cook for 1 minute.
    3. Add dried thyme and rinsed lentils, water, soup cube.Bring to boil and simmer. Cover; cook until the lentils are soften about 30 minutes.
    4. Add the red wine vinegar, salt and pepper. Sprinkle your favorite cheese or crouton.
