Crock pot lentil soup
I love lentil soup and I must not be alone in that love because when I used to buy canned soup I loved a particular brand’s lentil soup and it was always missing from the shelf. I cannot believe it took me so long to make this because it was so easy and so delicious. Even The Husband liked it and I never thought I would get him to eat a lentil! Ingredients
- 2 cups lentils, rinsed
- 16 0unces vegetable or beef broth
- 1 beef bouillon cube
- 3 cups water
- 1 small onion, diced
- 3 carrots, diced into large pieces (approximately 1 1/2 cups)
- 2 celery stalks, diced into large pieces (approximately 1 cup)
- 3 cloves garlic, minced
- 1 bay leaf
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon turmeric
- 1/2 teaspoon ground coriander
- 1/2 teaspoon crushed red pepper
- 1/4 teaspoon cayenne pepper
Directions
- Rinse the lentils thoroughly. Put all the ingredients into a crock pot, turn on low and cook 5 to 6 hours. Makes approximately 8 (1 cup) servings.
