Crock pot lentil soup

I love lentil soup and I must not be alone in that love because when I used to buy canned soup I loved a particular brand’s lentil soup and it was always missing from the shelf. I cannot believe it took me so long to make this because it was so easy and so delicious. Even The Husband liked it and I never thought I would get him to eat a lentil!

Ingredients

  • 2 cups lentils, rinsed
  • 16 0unces vegetable or beef broth
  • 1 beef bouillon cube
  • 3 cups water
  • 1 small onion, diced
  • 3 carrots, diced into large pieces (approximately 1 1/2 cups)
  • 2 celery stalks, diced into large pieces (approximately 1 cup)
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon crushed red pepper
  • 1/4 teaspoon cayenne pepper

Directions

  1. Rinse the lentils thoroughly. Put all the ingredients into a crock pot, turn on low and cook 5 to 6 hours. Makes approximately 8 (1 cup) servings.
