Lemon Yogurt~Dill Potato Warm Salad
Absolutely wonderful flavor profile-serve warm with any grilled or baked entrée. Ingredients
- 4 Yukon Gold Potatoes
- Handfull of fresh dill
- 2-5.5 ounce Lemon Yogurt (Your brand choice-I use Dannon)
- one tablespoon White Pepper
- 1 teaspoon iodized salt
- one stalk celery, rinsed, grated
Directions
- Prick each potato several times with a fork, lay between two paper towels and microwave on high 8 minutes, allow to cool a bit to touch
- In a mixing bowl add lemon yogurt, all seasoning and stir gently, cube potatoes and add to mixing bowl ingredients.
- Garnish with extra fresh dill
- Serve warm-Delicious!
