Lemon Yogurt~Dill Potato Warm Salad

Absolutely wonderful flavor profile-serve warm with any grilled or baked entrée.

Ingredients

  • 4 Yukon Gold Potatoes
  • Handfull of fresh dill
  • 2-5.5 ounce Lemon Yogurt (Your brand choice-I use Dannon)
  • one tablespoon White Pepper
  • 1 teaspoon iodized salt
  • one stalk celery, rinsed, grated

Directions

  1. Prick each potato several times with a fork, lay between two paper towels and microwave on high 8 minutes, allow to cool a bit to touch
  2. In a mixing bowl add lemon yogurt, all seasoning and stir gently, cube potatoes and add to mixing bowl ingredients.
  3. Garnish with extra fresh dill
  4. Serve warm-Delicious!
