Lemon-Wafer-Pudding Quick Dessert
My family loves this easy, scrumptious dessert-you will too! Ingredients
- 2 boxes Instant Lemon Pudding (4 ounce size-each box)
- 4 cups cold milk
- one 10 ounce box Vanilla Wafer cookies
- 6 room temperature egg whites
- 2-1/2 tablespoons granulated sugar
- dash of vanilla extract
Directions
- In a stand mixer bowl add instant pudding and milk run to combine
- In a dish (I use an oval one) add vanilla wafers to the bottom, add lemon instant pudding on top
- In another mixing bowl add egg whites, vanilla and one tablespoon of sugar at a time and using a hand mixer on high whip egg whites and sugar until peaks form
- transfer on top of pudding, place under the oven broiler to lightly brown
- Spoon and serve
- Yum!
