  • Lemon Chicken Soup With Spinach And Pasta

    Ingredients

    • 1 Tbsp. extra virgin olive oil
    • 1 x onion minced
    • 4 x cloves garlic chopped
    • 4 x celery stalk minced fine
    • 2 x carrot chopped
    • 1 x red bell pepper minced
    • 8 c. fat-free chicken broth
    • 2 c. shell pasta (small)
    • 2 c. cooked chicken cubed
    • 2 Tbsp. fresh lemon juice
    • 2 tsp lemon peel grated
    • 6 c. fresh spinach stems removed salt and pepper to taste

    Directions

    1. 1. Heat oil in a large pot over medium heat. Add in onion and garlic, cook 1 minute. Add in celery. carrots, pepper and saute/fry till tender, about 8 min. Add in broth and bring to a boil. Reduce to simmer and cook about 20 min.
    2. 2. Meanwhile cook pasta in large pot of boiling water, drain. (Note: I cook pasta in water rather than broth so the pasta will not soak up all my homemade broth,. If you want, add in pasta to broth after 20 min, cook 10 min and go to step
    3. 3. You will probably need to add in more broth or possibly water to soup.)
    4. 3. Fold in pasta, chicken, lemon juice, peel and spinach. Cook till spinach just wilts. Season with salt and pepper.
    5. Optional: Sprinkle freshly grated parmesan in bowls after serving.
    6. Amount will objviously affect calories and fat.
