Lemon Blueberry Muffins
Two great flavors that were just made for each other come together in these tasty muffins. Ingredients
- 1 egg
- 2 cups buttermilk baking mix
- ¼ cup sugar
- 2 tbsp. vegetable oil
- 1 container (6 oz.) lemon-flavored yogurt
- ¾ cup fresh or frozen blueberries
- 12 paper baking cups
Directions
- Preheat oven to 400 degrees.
- In a medium bowl, lightly beat egg with a fork.
- Mix in the baking mix, sugar, vegetable oil, and yogurt, stirring just until moistened (batter should be lumpy).
- Gently fold in blueberries.
- Fill muffin cups 2/3 full. Bake at 400 degrees for 15 to 18 minutes or until golden brown.
