Lemon And Caper Marinade For Seafood Or Chicken
Ingredients
- 1 1/2 tsp finely-chopped fresh lemon zest
- 1 Tbsp. finely-chopped fresh basil
- 1 tsp finely-chopped fresh thyme
- 1 Tbsp. thinly-sliced fresh chives
- 2 Tbsp. capers finely minced
- 1 Tbsp. fresh lemon juice
- 1/4 c. extra-virgin extra virgin olive oil
Directions
- Whisk together lemon zest, basil, thyme, chives, capers, lemon juice and oil.
- Use to marinate fish, shrimp, scallops or possibly chicken breasts for at least 4 hrs or possibly up to 8 hrs. Will keep refrigerated up to 2 days.
