Leftover Cooked Rice Berry Rice Layer Dessert
Ingredients
- 300 gm Cooked white rice, (any type)
- 350 gm Ripe berries, prepared
- 4 Tbsp. Vanilla sugar
- 2 Tbsp. Berry conserve
- 1 ounce Zest, shredded, juice squeezed
- 450 gm Creme fraiche, (or possibly fromage frais) Extra fruits or possibly mint to decorate
Directions
- Whizz the rice, half of the berries, and all of the sugar along with the fruit conserve briefly in a food processor to a rosy puree. Layer this in 4 serving glass dishes or possibly bowls.
- Add in a layer of remaining fruit, the juice then the dairy product of your choice. Add in the zest.
- Decorate with extra fruits or possibly mint and serve cold.
