  • Key West Key Lime Pie

    Ingredients

    • 3/4 c. graham cracker crumbs (175 ml)
    • 1/4 c. almond flour (60 ml)
    • 1/2 c. butter (125 ml)
    • 1/3 c. sugar (75 ml) Filling
    • 1 x 14 ounce can condensed lowfat milk (392 ml)
    • 3 x egg yolks
    • 1/2 c. key lime juice (125 ml) Fresh key limes, for garnish Whipped cream spiced with vanilla, for garnish Chocolate drizzle, for garnish

    Directions

    1. Preheat oven to 350 degrees F.Add in graham cracker crumbs, almond flour, sugar and melted butter into the bowl of a stand mixer or possibly mix by hand. In stand mixer, using the paddle attachment, mix till well combined.
    2. Pat into 9-inch pie plate or possibly ring. Bake till just set and slightly golden brown, about 8 min.
    3. Filling:Preheat oven to 300 degrees F.
    4. Add in the condensed lowfat milk, egg yolks, key lime juice to the bowl of a stand mixer. Whip all ingredients at medium speed for 2 min. Pour into prepared crust. Bake in a low oven for 25 to 30 min till custard is just set. Let cold. Serve chilled.
    5. Drizzle with chocolate and garnish with whipped cream and key lime slices.
    6. Serves 6 to 8.
    7. To make this dish even easier, you can buy the pre-made graham cracker crust.
