Kentucky Hot Brown
This is a regional favorite that originated at Louisville's Brown Hotel.This is a variation of the original recipe. Ingredients
- 3 ounces turkey breast, roasted, sliced OR a 1/4 inch thick slice of cooked country ham
- 1 slice white or wheat bread, toasted
- 2 slices tomato
- 2 slices bacon, cooked, drained, and finely chopped
- SAUCE:
- 4 Tablespoons butter
- 4 Tablespoons flour
- 1 cup cream or half & half
- 1/2 cup Swiss cheese, grated
- salt and white pepper to taste
Directions
- Heat butter and add flour. Whisk and slowly cook for 5 minutes. Whisk in cream or half & half and heat. Whisk in cheese until melted. Season. SIMMER for about 30 minutes. Sauce should be very thick.
- Quarter toast and place in an oven safe dish. Top with turkey or ham and tomatoes. Cover well with sauce.
- Bake at 400° for 10 minutes. Garnish with chopped bacon.
