Kentucky Hot Brown

This is a regional favorite that originated at Louisville's Brown Hotel.This is a variation of the original recipe.

Ingredients

  • 3 ounces turkey breast, roasted, sliced OR a 1/4 inch thick slice of cooked country ham
  • 1 slice white or wheat bread, toasted
  • 2 slices tomato
  • 2 slices bacon, cooked, drained, and finely chopped
  • SAUCE:
  • 4 Tablespoons butter
  • 4 Tablespoons flour
  • 1 cup cream or half & half
  • 1/2 cup Swiss cheese, grated
  • salt and white pepper to taste

Directions

  1. Heat butter and add flour. Whisk and slowly cook for 5 minutes. Whisk in cream or half & half and heat. Whisk in cheese until melted. Season. SIMMER for about 30 minutes. Sauce should be very thick.
  2. Quarter toast and place in an oven safe dish. Top with turkey or ham and tomatoes. Cover well with sauce.
  3. Bake at 400° for 10 minutes. Garnish with chopped bacon.
