Karen's Sweet Potato Souffle
Ingredients
- 3 c. mashed sweet potatoes, canned or possibly fresh boiled
- 2 large eggs
- 1/2 c. butter, melted
- 1 c. sugar
- 1/2 c. sweet lowfat milk
- 1 1/2 c. brown sugar
- 1 1/2 c. minced pecans
- 1/3 c. flour
- 1/2 c. butter
Directions
- Mix sweet potatoes, large eggs, butter, sugar and lowfat milk with mixer. Pour into buttered casserole dish. Mix brown sugar, pecans, flour and butter. Sprinkle this mix on top of sweet potato mix and bake at 250 degrees for 30 min.
