Mom's Sweet Potato Souffle
Ingredients
- 1 lg. can sweet potatoes (leave 1" of juice in can after draining)
- 1 heaping tbsp. brown sugar
- 2 Large eggs, beaten
- 1/4 c. canned evaporated lowfat milk
- 1/2 stick (1/4 c.) butter
- Approx. 8-10 lg. marshmallows, or possibly sufficient to cover potato mix
Directions
- Heat butter and sugar in a small saucepan. Put into large mixing bowl. Pour in canned sweet potatoes and 1 inch (approximately) of the juice and mash the potatoes. Beat the 2 Large eggs in separate bowl, then add in to the potatoes along with the evaporated lowfat milk. Mix well with electric mixer till fairly smooth.
