Jicama n' Carrot Sticks~Pineapple Salad
Great Side Dish to any picnic, BBQ, or family get together. Ingredients
- One jicama (cut into matchsticks)
- 3 carrots (rinsed, peeled, cut into matchsticks)
- 1/4 cup Pineapple Juice
- 5 ounce can crushed pineapples
- 1/4 cup crumbled Blue Cheese (sometimes referred as Bleu Cheese), Optional
Directions
- Cut Jicama into matchsticks and place in a mixing bowl
- Peel, rinse, cut carrots into matchsticks and add into mixing bowl
- Add pineapple juice
- Add crushed pineapples
- Stir to Mix
- Add Blue Cheese crumbles, optional
- Cover and chill 30 minutes before serving
