Japanese Carrot Salad Dressing
Ingredients
- 1 sm carrot peeled and shredded (about 1/2 c.)
- 2 Tbsp. mirin
- 2 Tbsp. rice vinegar or possibly cider vinegar
- 1 Tbsp. soy sauce
- 1/2 tsp dark sesame oil (or possibly less - just for flavor)
- 2 Tbsp. chopped onions
- 1 Tbsp. prepared mustard
- 1 Tbsp. fresh ginger root grated (optional)
Directions
- Makes 2/3 c.
- Whirl all in a blender. (I like to keep the carrot shredded and stir into the blended mix.) Well covered, it keeps in the refrigerator about a week.
