Ingredients

  • 1 sm carrot peeled and shredded (about 1/2 c.)
  • 2 Tbsp. mirin
  • 2 Tbsp. rice vinegar or possibly cider vinegar
  • 1 Tbsp. soy sauce
  • 1/2 tsp dark sesame oil (or possibly less - just for flavor)
  • 2 Tbsp. chopped onions
  • 1 Tbsp. prepared mustard
  • 1 Tbsp. fresh ginger root grated (optional)

Directions

  1. Makes 2/3 c.
  2. Whirl all in a blender. (I like to keep the carrot shredded and stir into the blended mix.) Well covered, it keeps in the refrigerator about a week.
