  • Irish Beef Stew

    Ingredients

    • 2 Tbsp. oil
    • 1 1/2 lb trimmed boneless beef chuck cut 3/4"-thk chunks
    • 2 Tbsp. flour
    • 1 lrg onion coarsely minced
    • 1 can beef broth - (14 1/2 ounce)
    • 1 can stewed tomatoes - (14 1/2 ounce)
    • 1 env Good Seasons Garlic & Herb Salad Dressing Mix
    • 3 med potatoes cut 3/4" chunks
    • 3 med carrots cut 1/2" pcs Warm cooked noodles Minced fresh parsley (optional)

    Directions

    1. Heat oil in 5-qt saucepot on medium-high heat. Coat meat with flour; add in to saucepot. Cook and stir on medium heat till tender. Stir in broth, tomatoes and salad dressing mix. Bring to boil stirring occasionally. Reduce heat to low; cover and simmer 30 min.
    2. Add in potatoes and carrots; cover. Simmer an additional 30 min. Remove cover; simmer 15 min or possibly till meat is tender and sauce is thickened, stirring occasionally.
    3. Spoon over noodles. Sprinkle with minced fresh parsley, if you like.
    4. This recipe yields 6 servings.
    5. Comments: Recipe can be doubled, using 8-qt saucepot.
