    Incredible 3 Way Apple Soup combines apples, apple cider, and dried apples in a delicious soup with a hint of bacon flavour. Gluten, nut and dairy free. Made in 30 minutes.

    Ingredients

    • 2 pounds of Apples (peeled, cored & cut into chunks) Your choice of variety
    • 1 pound of Parsnip (peeled & roughly diced)
    • 2 tbsp. butter
    • 1/2 tsp. ground ginger
    • 1 tsp. cinnamon
    • 1 1/2 cups fresh apple cider
    • 2 cups onion broth
    • 1 tsp. fresh lemon juice
    • 1/4 tsp. garlic powder
    • 1 tbsp. bacon flavoured olive oil (and more for garnish)
    • 1/4 tsp. smoked sea salt
    • Pepper to taste
    • 1/2 cup sliced dried apples (for garnish)

    Directions

    1. Prepare apples and parsnips and set aside in a bowl
    2. Heat butter in a heavy bottom pot over medium heat
    3. Add apples, parsnip, ginger, cinnamon, salt & pepper
    4. Sauté for 10 minutes
    5. Add lemon juice
    6. Add apple cider and onion broth
    7. Bring to a boil, reduce and cook for 10 minutes (apples & parsnips should be fork tender)
    8. Remove from heat
    9. Using an immersion blender, pureé until smooth
    10. Add bacon oil
    11. Ladle into bowls
    12. Garnish with dried apple slices, and additional bacon flavoured oil
    13. ENJOY!!
