Apple Soup
Great fall soup, with freshly picked apples. Ingredients
- 3 tbsp oil
- 1 kohlrobi, diced
- 3 carrots, diced
- 2 stalks celery, diced
- 1 sm-med size green bell pepper, diced
- 2 tomatoes, diced or 1-15oz can diced tomatoes
- 9 cups chicken stock
- 6 lg green apples
- 3 tbsp flour
- 2/3 cup heavy cream
- 1 tbsp sugar
- 2-3 tbsp lemon juice
- salt and pepper
Directions
- Heat oil in a large pot, add the kohlrabi, carrots, celery, green pepper and tomatoes, cook for 5-6 mins or til just softened.
- Pour in the chicken stock, bring to a boil, then reduce the heat and simmer for about 45mins.
- Meanwhile, peel and core the apples then chop into small cubes.
- Add to the pot and simmer for 15mins.
- Mix together the flour and cream, stir into the soup. Bring to a boil. Add suger, lemon juice and adjust salt and pepper.
