    Hungarian Lemon Poppy Seed Cookies

    • 2/3 cup sugar
    • 1/2 cup (1 stick) butter, softened
    • 1 egg
    • 2 teas grated lemon peel
    • 1 1/4 cups flour
    • 1/2 tsp baking soda
    • 1/4 tsp salt
    • 1 tbsp poppy seeds
    • Glaze:
    • 1 cup powdered sugar
    • 2 tbsp lemon juice


    1. Preheat to 350
    2. Beat sugar and butter in large bowl with electric mixer at medium speed till creamy. Beat in egg and lemon peel. Combine flour, baking soda and salt, gradually add to butter mixture. Beat in poppy seeds on low.
    3. Drop dough by heaping teaspoonfuls 2 inches apart onto ungreased cookie sheets. Bake 11 to 12 minutes or until edges are lightly browned. let stand on cookie sheets for a minute or two, then cool on a wire racks to cool
    4. Meanwhile mix glaze: combine powdered sugar and lemon juice in a small bowl and mix well. Drizzle glaze over cookies let stand until glaze is set, about 20 mins.
