Hummus & Rice

- 15 ½ oz. can of butter beans – drained
- ¼ of a fresh lemon – with skin
- 5 cloves of garlic
- ¼ tsp. red pepper flakes
- ¼ tsp. black pepper flakes
- ¼ tsp. salt
- ¼ tsp. garlic powder
- 6 ½ oz. jar of marinated artichoke hearts – with the marinade
- ½ cup of fresh Italian parsley
- 3 tablespoons of olive oil
- 3 cups of uncooked rice
Directions
- Prepare the rice as directed or in a rice cooker
- In a food processor combine the drained butter beans, fresh lemon, garlic, seasonings, parsley, artichoke hearts with the marinade and the olive oil.
- Process this with a few good chops.
- Plate the rice and spoon this mixture over the rice. Garnish with lemon and parsley.
