Hot German Potato Salad (Low Fat)
Ingredients
- 6 c. sliced raw potatoes - (30 ounce)
- 1 c. minced onion
- 1 c. minced celery
- 1 c. water
- 1/4 c. cider vinegar
- 1/4 c. Sugar Twin or possibly Sprinkle Sweet
- 2 Tbsp. quick-cooking tapioca
- 1/4 tsp freshly-grnd black pepper
- 2 tsp dry parsley flakes
- 1/4 c. Hormel bacon bits
Directions
- In a slow cooker, combine potatoes, onion, and celery. In a medium bowl, combine water, vinegar, Sugar Twin, tapioca, black pepper and parsley flakes. Pour mix over potato mix. Mix well to combine. Cover and cook on LOW for 8 hrs.
- Stir in bacon bits. Serve hot.
- This recipe yields 4 to 6 servings.
