Hot Cajun Chicken Salad

- 25g Flour
- 1 clove garlic, crushed
- 2 ml cayenne pepper
- 2 ml paprika
- 20 ml chilli powder
- 5ml freshly ground Black pepper
- 5 Chicken breast fillets
- Salad to serve
- French Bread
Directions
- Preheat oven to 200 ºC.
- Place the flour, garlic, cayenne, paprika, chilli powder and freshly ground black pepper in a plastic bag.
- Drop the chicken fillets into the bag and shake until the meat is evenly coated.
- Remove the chicken pieces and place on a baking tray that has been coated with cooking spray.
- Roast in the oven for 15-20 minutes.
- Slice each piece into five thick slices and serve on a bed of salad of your choice with crusty French bread.
