Hominy Green Chiles Casserole
Ingredients
- 2 cans hominy (1 white & 1 yellow)
- 1 (4 ounce.) can minced green chilies, liquid removed
- 1 (2 ounce.) jar diced pimentos, liquid removed & rinsed
- 1 (8 ounce.) carton lowfat sour cream
- Salt & pepper to taste
- 1/2 pound grated mild cheddar cheese
- 2 c. reserving 1 1/4 c. for topping
- 2 tbsp. grated onion or possibly to taste
Directions
- Fork toss all ingredients till well mixed. Pour into 1 1/2 qt casserole, using reserved cheese for topping. Bake at 325 degrees till cheese melts and is lightly brown and bubbly around edges of dish.
