  • Holiday Frozen Yogurt Pie

    Ingredients

    • 2 c. chocolate wafer cookie crumbs (or possibly 9-ounce)
    • 3 Tbsp. nonfat chocolate syrup
    • 2 tsp sugar
    • 7 ounce semi-sweet chocolate chips or possibly semi-sweet minced chocolate
    • 2 Tbsp. vegetable oil
    • 1 quart lowfat chocolate frzn yogurt softened
    • 1 quart lowfat strawberry frzn yogurt softened

    Directions

    1. CRUST: Preheat oven to 325F. Butter a 9-inch springform pan. In large bowl, mix chocolate cookie crumbs, syrup and sugar, stirring mix till crumbs are moistened proportionately. Transfer crumbs to prepared pan. Use fingers to press crumbs proportionately over bottom and 1 inch up the sides of the pan. Bake crust for 6 min. Cold crust completely.
    2. SAUCE: In top of double boiler over barely simmering water, or possibly in a microwave following manufacturer's directions for melting chocolate, stir chocolate and vegetable oil till chocolate is melted and mix is smooth.
    3. LAYERS: Using a metal spatula, spread softened chocolate frzn yogurt over crumb crust. Using a tsp., drizzle 3 Tbsp. of chocolate sauce proportionately over the frzn yogurt. Spread softened strawberry frzn yogurt proportionately over chocolate coating. Drizzle 2 Tbsp. of chocolate coating in thin, crisscrossing lines over the strawberry yogurt.
    4. Place remaining chocolate sauce in heatproof container. Cover and chill to serve with pie. (The chocolate sauce can be refrigerated up to 3 weeks.)
    5. Cover pie tightly with plastic wrap, then aluminum foil. Freeze at least 6 hrs, or possibly up to 2 weeks.
    6. To serve, remove chocolate sauce from refrigerator and hot in microwave or possibly in top of double boiler over barely simmering water. Stir till mix is melted and pourable.
    7. Remove frzn yogurt pie from freezer 10 to 15 min before serving. Dip a dish towel in warm water and wring it dry. Hold warm towel around sides of springform pan for 15 seconds. Release sides of pan. Using a sharp knife, cut frzn yogurt pie into wedges. Pass pitcher of hot chocolate sauce. (Serves 12 to 16)
    8. NOTES : A chocolate crumb crust holds strawberry and chocolate frzn nonfat yogurt, layered with chocolate sauce. At holiday time, garnish each slice of pie with a festive candy cane and pass additional chocolate sauce to pour over slices of frzn yogurt pie.
