    The original recipe came from our favorite James Beard cookbook, but we added a few of our own twists.

    Ingredients

    • 1 c. all-purpose flour
    • 3/4 c. whole wheat flour
    • 2 tbsp. flax seeds
    • 1/4 c. wheat germ
    • 2 tsp. baking powder
    • 1/2 tsp. salt
    • 2 tbsp. sugar
    • 3 eggs, separated
    • 1 3/4 c. milk
    • 6 tbsp. melted butter

    Directions

    1. Sift the flour(s) into the flax seeds, wheat germ, baking powder, salt, and sugar.
    2. In a mixing bowl, beat the egg yolks. Add the milk and melted butter.
    3. Stir in the flour mixture just until moistened.
    4. Beat the egg whites until they form firm peaks. Fold them into the batter.
    5. Pour immediately into preheated waffle iron. Cook for approx. 5 min.
