Heather Waffles
The original recipe came from our favorite James Beard cookbook, but we added a few of our own twists. Ingredients
- 1 c. all-purpose flour
- 3/4 c. whole wheat flour
- 2 tbsp. flax seeds
- 1/4 c. wheat germ
- 2 tsp. baking powder
- 1/2 tsp. salt
- 2 tbsp. sugar
- 3 eggs, separated
- 1 3/4 c. milk
- 6 tbsp. melted butter
Directions
- Sift the flour(s) into the flax seeds, wheat germ, baking powder, salt, and sugar.
- In a mixing bowl, beat the egg yolks. Add the milk and melted butter.
- Stir in the flour mixture just until moistened.
- Beat the egg whites until they form firm peaks. Fold them into the batter.
- Pour immediately into preheated waffle iron. Cook for approx. 5 min.
