Harvest Time Meatballs
Ingredients
- 1 x Recipe Basic Meatballs, *
- 2 tsp Margarine Or possibly Butter
- 1/8 tsp Instant Chopped Garlic, **
- 1/2 tsp Thyme Leaves
- 1/2 lb Fresh Mushrooms, ***
- 3 x Zucchini, Md, ****
- 1/2 tsp Salt
- 1/3 c. Parmesan Cheese, Grated
- 2 x Tomatoes, ***** See Recipe 12.
Directions

- ***** Cut each tomato into 8 wedges.
- Prepare the basic meatballs and set aside. Heat the margarine in a large skillet. Add in the garlic, thyme leaves, mushrooms, and zucchini; cook over medium-high heat for about 5 min, stirring occasionally. Add in the cooked meatballs; cover and simmer, stirring occasionally, till the vegetables are tender, about 10 min. Sprinkle with the salt and cheese. Add in the tomato wedges, cover and heat for 2 to 3 min.
