  • Harvest Time Praline Apple And Cranberry Pie

    Ingredients

    • 3/4 c. brown sugar
    • 1/2 c. vanilla pudding pwdr cook & serve, not instant
    • 1 1/2 tsp cinnamon
    • 6 c. Granny Smith Apples peeled & sliced
    • 1 3/4 c. cranberries
    • 2 Tbsp. lemon juice Praline Topping
    • 1/2 c. butter
    • 3/4 c. brown sugar
    • 2 Tbsp. evaporated lowfat milk
    • 1 1/2 tsp vanilla extract
    • 1/2 tsp caramel flavor
    • 1 c. minced peanuts

    Directions

    1. Combine the brown sugar, pudding, & cinnamon. Add in apples, cranberries, and lemon juice: toss to coat. Spoon into the middle of pie crust.
    2. Praline Topping: Heat butter along with brown sugar and lowfat milk in a heavy skillet over low heat, stirring frequently. Increase heat and bring to a simmer, stirring constantly. Stir in vanilla, caramel flavor, and nuts. Pour mix into a bowl and let stand till slightly thickened; about 10 min. Bake at 350 for 65 min. Cover last 20 min of baking to avoid excessive browning.
    3. Yield: one 9 inch pie.
