  • Grilled Tuna With Ginger Oyster Sauce

    Ingredients

    • 2 1/2 Tbsp. bottled Chinese oyster sauce
    • 1 1/2 Tbsp. finely-chopped onion
    • 2 1/2 tsp minced fresh ginger
    • 2 1/2 Tbsp. rice wine vinegar
    • 2 1/2 Tbsp. sesame oil
    • 4 x tuna steaks, 3/4" to 1" thk (7 ounce ea) Salt to taste Freshly-grnd black pepper to taste

    Directions

    1. Place oyster sauce in small mixing bowl along with onion and ginger. Whisk in rice wine vinegar, then gradually whisk in sesame oil. Set aside. Sauce can be made in advance. Cover and chill up to 2 weeks.
    2. Prepare medium-warm fire in grill. Set grate 4 to 5 inches above glowing coals. Brush grate with oil just before grilling to help prevent sticking.
    3. Season steaks with salt and pepper. Place them in shallow dish and pour 1/4 c. of oyster-ginger marinade over them. Set aside remaining marinade. Coat steaks all over with mix. If you have time, cover them with plastic wrap and let them marinate at room temperature at least 30 min. Chill them if kitchen is warm. Otherwise you can grill them right away.
    4. Remove steaks from marinade and place over warm coals. Grill first side 2 to 3 min till browned. Turn steaks and grill other side another 2 to 3 min. Steaks will be pink inside. Cook few min longer on each side if you want them well done.
    5. Place steaks on hot dinner plates, spoon rest of reserved oyster-ginger sauce over them and serve right away.
    6. This recipe yields 4 servings.
