  • Grilled Salmon Patties

    Ingredients

    • 1 can salmon - (16 ounce)
    • 1/2 c. crushed soda crackers
    • 2 x egg whites
    • 1 Tbsp. skim lowfat milk
    • 1/8 tsp freshly-grnd black pepper
    • 1/4 c. minced green pepper
    • 1/4 tsp dill
    • 4 Tbsp. fat-free mayonnaise

    Directions

    1. Start grill/light coals. Adjust the grate to be about 4 to 6 inches above the coals. Spray the top of a broiler pan generously with non-stick spray.
    2. In a large bowl, combine all ingredients except salmon, dill and mayonnaise. Fold in the salmon; shape into 4 balls and flatten. Place patties on the broiler pan. When the grill is ready/coals are white, place the broiler pan on the grate. Grill the patties till they are crisp and slightly browned. Remove to warmed plates. Top with mayonnaise and sprinkle with dill. (Note: Instead of mayonnaise, you may also serve with a chunky vegetable salsa - won't significantly change nutritional values.)
    3. This recipe yields 4 patties.
    4. NOTES : Diabetics or possibly those on calorie-controlled diets may count one serving as: 3 lean meat and 2 vegetables.
