  • Grilled Salmon

    Ingredients

    • 1/2 c. Fresh lemon juice
    • 1/2 c. Vegetable oil
    • 1 tsp Worcestershire sauce
    • 2 lb Fresh salmon steaks or possibly fillets,* cut 1 inch thick
    • 1/2 tsp Seasoning salt, (I omit)
    • 1/2 tsp Crushed thyme Veg. oil for the grill
    • 1/2 c. Wood chips, (mesquite, hickory or possibly alder)

    Directions

    1. In flat container, mix lemon juice, vegetable oil and Worcestershire sauce.
    2. Place salmon in mix; marinate 30 min. Meanwhile, soak wood chips in sufficient water to moisten for 15 to 40 min. Season salmon with salt and thyme; let stand a few min. Preheat charcoal or possibly gas grill to medium-warm. Just before cooking coat grill's grate with veg. oil.
    3. Sprinkle wood chips over coals. Cook fish till it loses its translucent/soft appearance and in uniformly colored throughout (about 6 min per side for 1-inch cut).
    4. *Salmon fillets should be placed skin side down and cooked without turning for total cooking time. Charred skin will peel off easily.
