  • Grilled Gulf Fish On A Bed Of Roasted Red Pepper Pasta

    Ingredients

    • 2 Tbsp. extra virgin olive oil
    • 1 lrg red bell pepper
    • 2 x -eight oz fillets of your favorite fish
    • 1 tsp Cajun Seasoning
    • 1 Tbsp. lemon juice Roasted Red Pepper Pasta
    • 1 Tbsp. extra virgin olive oil
    • 1/2 c. roasted red pepper, minced
    • 2 Tbsp. chopped fresh basil
    • 2 Tbsp. chopped fresh thyme
    • 1 Tbsp. chopped garlic
    • 2 c. heavy cream
    • 1/4 c. grated Parmesan cheese
    • 1/2 c. minced tasso
    • 1 tsp Cajun seasoning
    • 1/4 lb of rotini pasta cooked
    • 2 Tbsp. chopped parsley
    • 2 Tbsp. minced green onion

    Directions

    1. Grilled Fish:Fire up gas grill or possibly Bar-be-cue. Coat red bell pepper with 1 Tbsp. of extra virgin olive oil and cook over grill till red pepper is completely charred. Remove from pit and cover pepper with damp cloth and allow pepper to sit for 5 min.
    2. Peel skin of pepper while running under cold water.
    3. Season fillet with remaining Tbsp. of extra virgin olive oil, Cajun seasoning and lemon juice and grill fish till done. Approximately 5 min on each side. Set aside while you make Roasted Red Pepper Pasta.
    4. Roasted Red Pepper Pasta:In a saucepan heat 1 Tbsp. of extra virgin olive oil over medium heat, add in roasted red pepper, basil, thyme and garlic. Cook for one minute.
    5. Stir in heavy cream, Parmesan cheese, Tasso and Cajun seasoning, bring to boil. Lower fire and simmer till sauce thickens slightly.
    6. Add in pasta and cook just till pasta is heated. Stir in parsley and green onions. Divide pasta onto 2 plates and top each portion of pasta with fillet of grilled fish.
    7. Yield 2 servings
