Green Pea Soup
This is quick, delicious and incredible to just look at. this is a soup for your emergency list of things to make NOW!!! Ingredients
- 1 large yellow onion, chopped
- 4-10 oz. boxes frozen baby peas (must be baby peas!), defrosted
- 5 cups rich chicken stock
- 1 tsp. curry powder
- 1/4 tsp. white pepper
- 1 1/2 tsp. sugar
- 1 # fresh spinach, chopped
- grated rind of 1 lemon
- 1-1/2 c heavy cream
Directions
- 1. In a blender, puree the onions, peas and spinach with a bit of the chicken stock in batches until smooth and silky.
- 2. In a soup pot, add all ingredients (EXCEPT CREAM), bring to a boil, reduce heat to low, and simmer for 8-10 minutes.
- 3. Add cream, bring back to simmer, cook an additional 5 minutes, and serve.
