Green Pea Soup

Ingredients

  • 1 large yellow onion, chopped
  • 4-10 oz. boxes frozen baby peas (must be baby peas!), defrosted
  • 5 cups rich chicken stock
  • 1 tsp. curry powder
  • 1/4 tsp. white pepper
  • 1 1/2 tsp. sugar
  • 1 # fresh spinach, chopped
  • grated rind of 1 lemon
  • 1-1/2 c heavy cream

Directions

  1. In a blender, puree the onions, peas and spinach with a bit of the chicken stock in batches until smooth and silky.
  2. In a soup pot, add all ingredients (EXCEPT CREAM), bring to a boil, reduce heat to low, and simmer for 8-10 minutes.
  3. Add cream, bring back to simmer, cook an additional 5 minutes, and serve.
