  • greek shrimp salad wrap

    Ingredients

    • Shrimp dressing:
    • 3 cups plain yogurt
    • 1/4 cup lemon juice
    • 1/2 cup peeled and chopped cucumber
    • 1/2 cup peeled and chopped red onion
    • 1/4 cup dry dill
    • 1/4 cup minced garlic
    • paprika
    • salt and pepper
    • 20 romaine crowns
    • 2 lbs spring mix
    • 2 lbs diced red peppers
    • 1 lb diced tomatoes
    • 1 lb carmamelized onions
    • 1 lb parmesan cheese
    • 2 lb feta cheese
    • salt and pepper
    • 4 lbs shrimp pieces or titi
    • 1/2 cup fresh dill
    • 20 garlic herb wraps

    Directions

    1. In a Medium bowl, whisk together the first 6 ingredients until well blened.
    2. Season with paprika, salt and pepper to taste.
    3. Refrigerate in a covered container.
    4. When ready to use, whisk again.
    5. In a large mixing bowl, combine baby spring mix, bell peppers, onions, olives, cucumbers, tomatoes, parmesan cheeeses and greek salad dressing. toss until blended.
    6. Season with salt and pepper.
    7. In a medium bowl, toss together the shrimp aand shrimp dressing.
    8. Place wrap shell on prep table, spread 3 oz. of shrimp mixture on bottom half of shell.
    9. Then place 2 ox of green mixture on top of the shrimp mixture.
    10. Roll the wrap starting from the botton to the top. Seal and slice in on the bias.
