  • Greek Shrimp Salad Wrap

    Ingredients

    • Shrimp Dressing;
    • Yogurt Plain 3cups
    • Lemon Juice 1/4cup
    • Cucumber 1/2cup Peel, Chop
    • Red Onion 1/2cup Peel, Chop
    • Dill, Dry 1/4cup
    • Garlic, Mincced 1/4cup Minced
    • Paprika to taste
    • Salt & Pepper to taste
    • Romaine, Crowns 20 ech
    • Spring Mix 2lbs
    • Red Peppers 2lbs Diced
    • Tomatoes 1lb Diced
    • Onions, Caramamelized 1lb Saute w/ Balsamic Vin.,
    • olive oil and salt & pepper
    • to taste
    • Parmesan Cheese 1lb
    • Feta Cheese 2lbs
    • Salt & Pepper to taste
    • Shrimp pieces, or Titi 4lbs
    • Fresh Dill 1/2cup
    • Garlic herb wrap 20ech

    Directions

    1. In a medium bowl, whisk together the first 6 ingredients until well blended
    2. Season with paprika, salt, and pepper to taste
    3. Refrigerate in a covered container
    4. When ready to use, whisk again
    5. In a large mixing bowl, combine, baby spring mix, bell peppers, onions, olives, cucumbers, tomatoes, parmesan cheeses, Greek salad dressing
    6. Toss until blened
    7. Season with salt and pepper
    8. In a medium bowl, toss together the shrimp and shrimp dressing
    9. Place wrap shell on prep table, spread 3ozs of shrimp mixture on bottom half of shell
    10. Then place 2ozs of greens mixture on top of the shrimp mixture
    11. Roll wrap starting from the bottom to the top seal and slice in on the bias
