Mexican Style Shrimp Salad
Ingredients
- Mexican Style Shrimp Salad
- 1 14oz bag small frozen cooked shrimp (thawed in refrigerator or under cold running water)
- 1 small white onion, diced small
- 5 green onions chopped (white and green parts)
- 1 can small dice tomatoes w/Jalapeno (or 1 can stewed tomatoes with Mexican seasonings mashed up real good)
- 1 bunch of Cilantro (I wash, dry and pull the small leaves off) (I like lots of cilantro, you can use the amount you like)
- The juice of 2 Large Persian limes
- Fresh gound black pepper
- I don't use salt but you can if you like.
- 1 Fresh Jalapeno, cleaned of seeds and membrane and diced fine

Directions
- Mix all ingredients together in a "glass" bowl that has a cover. Refrigerate till flavors marry and it gets good and cold. Serve with crackers or warmed corn or flour tortillas or get a bag of Tortilla Chips and dig in. NOTE: Use a glass containter to mix and store and a wooden or plastic spoon to stir. DO
- NOT USE a metal container or metal mixing utensil because of the acid content.
