  • Greek Potato Pancakes

    Ingredients

    • 1 x Egg, beaten
    • 2 c. Coarsely shredded potatoes
    • 1/2 pkt (10 ounce) frzn minced spinach, thawed, well liquid removed
    • 1/2 c. Crumbled feta cheese
    • 2 Tbsp. Bread crumbs
    • 1/8 tsp Salt, or possibly to taste Oil for deep frying

    Directions

    1. 1. In a medium bowl, beat the egg. Add in the potatoes, spinach, feta cheese, bread crumbs and salt; stir till combined.
    2. 2. Pour the oil 1/4- inch deep into a large skillet. Heat the oil over medium- high heat till it bubbles when a little potato mix is dropped in. Drop the batter by tablespoonsful into the oil. Cook till golden brown on bottom; turn and cook till golden brown on second side, about 3 min per side. Drain on paper towels.
