Bacon Potato Pancakes
Ingredients
- 5 x or possibly 6 Potatoes, uncooked, peeled, shredded
- 5 x strips Bacon, cooked and crumbled
- 1/2 c. Onion, Minced
- 2 x Large eggs, beaten
- 2 Tbsp. Flour
- 1 dsh nutmeg
- 1 x salt and pepper to taste Oil for frying
Directions
- Rinse and throughly drain potatoes. In a bowl combine all ingredients. In an electric skillet, heat 1/8 inch of oil to 375. Drop batter by 2 heaping Tbsp. into warm oil. Fry on both sides till golden.
