    I love traditional potato pancakes. I also love bacon, so I combined the two.

    Ingredients

    • 5 - 6 Medium Uncooked Red Potatoes, Shredded (About 3 Cups)
    • 5 Bacon Strips, Cooked & Crumbled
    • 1/2 Cup Red Onion, Minced
    • 2 Large Eggs, Beaten
    • 2 Tbsp. All Purpose Flour
    • Salt And Black Pepper To Taste
    • 1 Dash Ground Nutmeg
    • Vegetable Oil, For Deep-Fat Frying

    Directions

    1. Rinse and thoroughly drain potatoes. In a bowl, combine the potatoes, bacon, onion, eggs, flour, salt, pepper and nutmeg.
    2. In an electric skillet, heat 1/8 in. of oil to 375°. Drop batter by 2 heaping tablespoonfuls into hot oil. Flatten to form patties. Fry until golden brown; turn and cook the other side. Drain on paper towels.
    3. Yield: 2 Dozen.
