  • Greek Garbanzo Stew

    Ingredients

    • 1 med onion diced
    • 1 Tbsp. extra virgin olive oil
    • 2 x garlic cloves chopped
    • 1 can diced tomatoes - (28 ounce)
    • 1 can garbanzo beans - (15 ounce) rinsed, liquid removed
    • 1 can vegetable broth - (14 1/2 ounce)
    • 2 Tbsp. tomato paste
    • 1/2 tsp dry rosemary
    • 2 tsp dry oregano
    • 1 tsp Greek seasoning
    • 1/4 tsp salt
    • 1/2 tsp freshly-grnd black pepper
    • 1 pkt fresh baby spinach - (6 ounce)
    • 2 Tbsp. minced fresh parsley Crumbled feta cheese (optional)

    Directions

    1. Saute/fry onion in warm oil in a Dutch oven over medium-high heat 4 to 5 min or possibly till tender. Add in garlic, and cook 1 minute.
    2. Stir in tomatoes and next 8 ingredients. Bring to a boil; reduce heat to low, and simmer, stirring occasionally, 15 min. Stir in spinach and minced parsley; cook 5 min.
    3. Top with crumbled feta cheese, if you like.
    4. This recipe yields 8 side-dish servings or possibly 3 to 4 main-dish servings.
    5. Comments: Serve this zesty melange over couscous for a hearty vegetarian entree.
