  • Greek Style Salad With Spaghetti Squash

    Ingredients

    • 3 Tbsp. red wine vinegar
    • 2 tsp extra virgin extra virgin olive oil
    • 1 tsp dry oregano
    • 1/4 tsp salt
    • 1/4 tsp pepper
    • 2 x garlic cloves chopped
    • 3 c. spaghetti squash cooked
    • 2 c. minced tomato
    • 1 c. cucumber diced
    • 1/2 c. crumbled feta cheese
    • 1/4 c. diced green bell pepper
    • 1/4 c. diced red onion
    • 2 Tbsp. minced pitted kalamata olives
    • 15 1/2 ounce garbanzo beans liquid removed (1 can)

    Directions

    1. Combine first six ingredients in a bowl; stir well with a whisk.
    2. Combine squash and remaining ingredients in a large bowl. Add in vinegar mix; toss well. Cover and chill.
    3. 1 serving = 1 c.
    4. NOTES : This is one of my favorite ways to use spaghetti squash. It's portioned here as a side salad for 8, but it can be a vegetarian main dish for four.
