  • Greek Butter Cookies

    Ingredients

    • 1 c. butter (unsalted)
    • 1 c. confectioners sugar
    • 1 egg yolk
    • 1 tbsp. brandy
    • 3 c. flour, sifted
    • 1/2 teaspoon baking pwdr
    • 1 pound confectioners sugar
    • 1/2 c. blanched almonds, finely minced (optional)

    Directions

    1. Mix butter and 1 c. sugar till very light and fluffy. Stir in egg yolk and brandy. Then add in flour with baking pwdr, a little at a time. Knead well till dough is smooth. If it is too soft, add in a little more flour.
    2. Take small pcs of dough and shape into 1-inch balls, or possibly in a crescent or possibly pear shape, and insert a whole clove in each cookie. Place on lightly greased baking sheet.
    3. Bake at 350 degrees for about 20 min. Roll, while hot, in confectioners sugar or possibly sift the sugar over the top so it will be very well coated. Makes about 3 1/2 dozen. Remove clove before eating!
